 How do I properly store tea?
Tea should be stored in airtight, tin or ceramic containers. It should not be exposed to light. Light causes the natural oils and flavor to dissipate. It should be stored  in a cool area, away from heat and strong odors.

How long will tea keep?
Black teas should be consumed within one year of purchase. Oolong, Green, and White teas should be consumed with in six to twelve months.

 

How many cups can I get from a pound of tea?
Using the ratio of 1 teaspoon of tea to 6 ounces of water you will get a yield of approximately 200 cups of brewed tea, per pound of packaged tea leaves. This will vary depending on the size of the tea leaf. With teas in which you can get multiple steepings, such as Oolongs and some Greens, your tea will last much longer.

 

How do I properly brew tea?
Always start with fresh, cold water. Bring water to proper temperature for tea. Measure tea into infuser, and steep for proper time. Remove infuser, (or tea bag), and enjoy. If using the two pot method, measure tea in to first pot, and steep for proper time. Strain tea into previously warmed second pot. Never leave tea leaves in steeped water, or it will make the tea bitter.

For Black tea, bring water to full boil, 212 degrees.  Steep for 3-5 minutes, depending on tea.

For Oolong, bring water to 180-200 degrees. Steep for 3-4 minutes, depending on tea.

For Green, bring water to 160-175 degrees. Steep for 3-4 minutes, depending on tea.

For White- bring water to 150-170 degrees. Steep for 2-3 minutes, depending on tea.


 How do I make iced tea?

 Cold Brew Iced Tea: 

 Place 8-10 rounded teaspoons of tea in a gallon size container, either loose or in an infuser. Fill  with cold water. Let steep overnight (at least 8 hours). Strain or remove infuser. Serve over ice. Cold brew requires less tea and produces refreshing iced tea. 

 Hot Brew Tea:

Bring to a boil a quart of water. Remove from heat and steep tea, 10-15 teaspoons, depending on desired strength. Allow to steep allotted time, depending on tea used. Remove tea. Add sweetening to taste. Pour into gallon jar, top off with cool, fresh water. Allow to cool completely before adding ice. (Allow boiled water to cool a bit if using Oolong, Green or White tea.)
